The symlink points to the wrong directory, it should be /opt/ungoogled-chromium-bin/. Also the desktop file calls this Inox and attempts it to start using firejail with the default settings -- however when doing so, you get the following error:

[2:2:0117/051122:ERROR:chrome_browser_main.cc(1676)] Failed to create a ProcessSingleton for your profile directory. This means that running multiple instances would start multiple browser processes rather than opening a new window in the existing process. Aborting now to avoid profile corruption.

Which is most likely due to an unadjusted restriction (because the chromium profile isn't automatically selected). This is fixable by either removing firejail from the equation or starting it as follows: firejail --profile=/etc/firejail/chromium.profile uchromium --no-sandbox.

Also the icon isn't shown or propery found because it's on the non-standard /opt/ path.
